A great plant to add contrasting foliage interest to the front or middle of a sunny border, Eryngium Silver Ghost has teasel-like cones of pale green flowers that mature to steel-blue. The flowers are surrounded by a ruff of silvery white spiny bracts. Keep the flower heads on all winter, as they look amazing. The leaves are pale silver and spiky.

The Giant Sea Holly, as it is commonly known, is a rosette-forming biennial, but self-seeds freely. It's a popular choice for flower arrangements, both fresh and dried.
