Describing quince jelly is not easy, as it’s delicately sweet but also fragrant. Quince is a yellow fruit which tastes like a cross between apples and pears and, as such, the jelly has a dense consistency allowing it to be spread in sandwiches or as an appetising accompaniment to cheese, pork or game.

Hard and tart when raw, alchemy occurs when quince is cooked. The yellow fruit turns pink and soft and incredibly fragrant, and a benefit of being rich in pectin means that it is the ideal ingredient for making jams, jellies and quince cheese paste.
