The leaves of Winter Savory have a peppery, spicy flavour, and are often used in lentil or bean dishes. The woody perennial bears small white or pale pink flowers in summer and prefers a sunny position in light, chalky, well-drained soil. 
Insights

Grown in peat free compost in a biodegradable pot made from waste coir and natural latex. Remove plant from pot or cut/tear away some of the coir if the plant is well rooted and hard to remove.

  • Moist, well-drained soil
  • South, West or East aspect

Care
  • Pop the discarded coir pot in the green bin, leave out for birds to use for nesting, use as mulch or add to compost heap
  • Harvest regularly to promote new leaf growth
  • Water regularly, especially in hot weather, but do not over water
  • Prune lightly in spring to prevent it become leggy
  • For culinary use- strip leaves from stems and chop finely
  • May need protection from frost
  • Coir pots are supplied by one specific village producer in Sri Lanka. They have built a school, old people's home and extension to the local medical centre over the years from the proceeds of coir pot production
