Prepared in small batches and canned at Hevva!’s 350-acre farm in Bude, Cornwall, this recipe sees Cornish monkfish pan-fried in a garam masala crust and preserved in a lime and coconut oil, enhanced with a touch of Aleppo chilli. Perfect as an early evening indulgence, simply pair with fresh, lightly toasted bread and a glass of chilled white wine.

Named after a traditional cry, raised when shoals of pilchards were sighted off the Cornish coast, Hevva!, meaning “here they are”, are newly established Cornish cannery specialising in small batch British tinned fish. Using the Marine Conservation Society’s Good Fish Guide to decide which fish to work with, Hevva! only can fish with a good sustainability rating, scoring between one and four.
