WO Sauce
A unique take on Hong Kong’s classic XO sauce, Poon’s award-winning WO sauce is a versatile condiment with a rich flavour that is sure to lift almost any dish. Developed by Bill Poon himself, this sauce is made with salted shrimp and Poon’s very own Wind-Dried Bacon. The deep, earthy flavours make this a fantastic dipping sauce. To enjoy, simply loosen with a little soy sauce or rice vinegar.

Founded in 2021, Poon’s Sauces is the brainchild of Amy Poon, daughter of Bill Poon whose iconic Covent Garden restaurant was famous for the best Chinese food serving London’s great and good in the ‘70s and ‘80s. Chinese cuisine is truly in Amy’s blood, her grandparents also ran a successful restaurant in Macau, and she can even trace lineage back to chefs of the Chinese emperors.
