Green Fennel has both culinary and decorative value. Fine clouds of feathery, bright green leaves, which have a sweet aniseed flavour are crowned with flat-topped, sulphur-yellow flower heads in mid- to late summer - the perfect centrepiece for a sunny herb garden.

The leaves have a delicate aniseed flavour and are great used in summer salads or fish dishes to counteract any oiliness. Additionally, an infusion of Fennel used as a compress is excellent for softening rough chapped hands.
