Montebianco (Mont Blanc) is a heritage variety of fennel that produces the most wonderful large round bulbs, well closed and crunchy with intense green leaves. It also resists bolting. Eaten raw it bears a distinctive aniseed flavour, once cooked it develops into something more sweeter and more subtle.
