Scalia, the brain child of Benedetto Scalia, was born in the historic fishing port of Sciacca on the on the southern coast of Sicily in 1973, where the surrounding sea is particularly suited to bluefish fishing, especially anchovies. These freshly preserved fish are a staple of Sicilian cuisine and are processed by hand in accordance with local tradition. 

Although Benedetto Scalia began his work in a small restaurant, the renowned quality of his produce lead to the expansion into ever larger markets, winning over an increasing number of customers, and attracting the attention of many market leaders, a large number of which have asked Scalia to produce on their behalf.
